The first batch

Last night, enough veggies & herbs were ripe in my garden to make the first batch of salsa of the season. Man, do I love the fruit & vegetable abundance of this time of year!

Chris's Fresh and/or Freezer Salsa
Pulse in a food processor:
3T. onions
2 cloves garlic
2 sweet banana peppers (or whichever peppers you like best)
2-3T minced fresh cilantro

Add & pulse again:
3 large tomatoes, seeded

Pour veggies into a bowl & stir in:
2T lime or lemon juice
1t. salt
1/4t. pepper
1T sugar

Let sit for a couple of hours. Adjust salt, pepper, sugar to taste. Also, you'll notice it's very runny. I like to drain mine. Eat fresh or freeze for later.
